Join us in the atelier for an intimate introduction to sake, guided by a professional sake specialist, with a focus on locally made regional styles from Ishikawa and the broader Hokuriku region.

Sake, or nihonshu, is one of Japan’s most nuanced traditions, shaped by rice, water, koji, craftsmanship and season. In this guided tasting class, you will learn the foundations of sake in the quiet setting of the atelier, exploring its history, production methods, Ishikawa prefecture's regional characteristics and the subtle differences in aroma, texture and finish. The experience invites you to slow down and consider how place, patience and precision are expressed in each glass.

Because sake is best understood through comparison and conversation, each guest will be guided through a curated selection of nihonshu chosen to show a range of styles, temperatures and flavour profiles. The class will offer clear explanations for beginners while also sharing details that will interest guests with a deeper curiosity about Japanese food and drink culture.

The experience begins with a welcome tea infusion in the garden, followed by an introduction to the language and story of sake. In the calm atmosphere of the atelier, you will learn how rice polishing, fermentation, water, temperature and serving style influence the character of nihonshu. Your guide will then lead you through a structured tasting, helping you recognise fragrance, sweetness, acidity, umami and balance, while introducing simple ways to choose and enjoy sake with confidence.

After the tasting, you will pause for a seasonal lunch beneath the shade of our weeping cherry tree. The menu will be guided by the kitchen garden and the ingredients at their best on the day, offering a quiet moment to enjoy the relationship between the food and the complementary sake each dish has been paired with. Towards the end of lunch, there will be time to reflect on your new-found knowledge, share observations and ask final questions with your guide.

You will leave with a deeper appreciation of nihonshu and a sense of confidence in choosing and serving sake, enriching the way you enjoy each glass.

Time – 9am to 12.30pm, allowing 3.5 hours for tea, sake study, guided tasting and lunch.

Please note that if the weather is not suitable outside, the welcome tea will be served in the teahouse, and lunch will be served indoors in the atelier.
